Cheesy Garlic Chicken Kiev


This week I had planned on making chicken breast wrapped in parma ham, but when it came to the day I wanted something a little more 'naughty', so I spent the day thinking of alternatives to make and I decided whatever it was needed breadcumbs! I ove dinners like this, the ones that feel like you are having a real treat but they are 100% on plan.

Weekly Meal Plan & Weigh In: Perspective Time



So this week was the weigh in after the wedding weekend. I went completely off track the day of and the day after the wedding. I don't even want to think about how many smartpoints passed my lips. Was it worth it? Absolutely. Do I regret it? Not at all. We need to be able to have weekends like this in our life and not let the guilt consume us. For me, managing my weight is part of my life forever, and you can't always be guilty about going a little bit off plan. If you let the guilt creep in, its much more difficult to get yourself back onto your day to day healthy eating.

Buffalo Turkey Meatballs!



Back at the start of the year I discovered Frank's Hot Sauce (I know, what took me so long) and it has been a regular addition to my lunches ever since. The buffalo version is my favourite as I really like the slightly tangy/sweet flavour too it. And lets be honest, who doesn't love a nice big bowl of buffalo wings, and the sauce gives just a little taste of that!

Meal Plan & Weigh In - Wedding Edition!



This week was the big weigh in, the final weigh in before my beautiful friends wedding where I was to be bridesmaid. I really wanted to be back at goal, and back in January I really set my mind to sticking 100% to the plan to try and get there in time for the wedding. I really wanted to be able to do a good job as bridesmaid for my friend, and I knew if I was self conscious or worried about how I looked on the day it could distract me from doing whatever she needed.

Running Update



It's only been a few weeks but I am feeling so confident about my running. I haven't missed a training run yet and I have no intention of missing one over the next few weeks. With my friends wedding on Saturday I plan on just rescheduling Saturday & Sunday's runs to Friday & Monday.

Another Meal Plan & Weigh In Done!



I can hardly believe we are halfway through March already and my friends wedding is less than a week away! I still have one weigh in to go before the wedding but I have to say I am pretty happy with how 2016 has been going weight wise. This weeks weigh in saw me break the plateau and I was down 1.5lbs which brings my total weight loss for 2016 so far to 9.5lbs. To be honest I had spent so long hovering around the 11 stone mark I forgot how good it feels to be back at goal (well 0.5lbs away). I really didn't realise how much of a difference the 10lbs really made until now.

Broad Bean & Chickpea Falafel



One of my New Years resolutions that I have been really good at sticking too is eating more vegetarian food. We've pretty much been having at least one vegetarian meal a week since January and I am really enjoying the variety that I've been having because of it. It has really forced me to think that little bit more outside the box to find some interesting recipes that are well balanced! It would be quite easy to throw together some pasta and vegetable sauce, but things like that are really lacking in protein and I want to be sure all my meals are as balanced as possible.

Chicken Noodle Soup



For me the best soups are the ones that are more like a meal than a soup. I like the chunky soups in a light broth, rather than a blended totally smooth but thick types. I find with the blended versions they don't really fill me up as much and by the time I get to the end of the bowl I'm pretty bored.

Weekly Meal Plan & Weigh In: The Dreaded Plateau!



I've been working really hard the past couple of months and at first the weight was dropping off me. Over the past couple of weeks I have been at a bit of a standstill scales wise. I have been 100% on plan, tracking everything and starting to really up my activity, but still no movement on those awful scales. In January I lost 8lbs and in February I lost 1lbs, bit of a difference there but no real solid reason for it. I reviewed my journal to see if I could spot anything but it was really was baffling. And while I didn't let it discourage me, I was starting to get a little frustrated.

Running!


I mentioned in my last meal plan post that I back running, and I'm sure those that follow me on instagram and facebook have seen the reappearance of my running updates. To try and keep myself on track and on the roads I am going to start weekly updates here to show my progress. I'm not going to put too much pressure on myself because that never ends well for me!
