Taco Turkey Salad


Now the summer seems to finally be here, its time to look at some lighter options for dinner time! Salads are great but it can be easy for them to get a bit boring and repetitive so its nice to be able to mix it up a bit. This recipe makes use of turkey mince again and is really quick and easy to throw together mid week. 


I'm a big fan of mexican flavours and this was exactly what I needed. I took a bit of inspiration from a you tube video I'd seen and just altered it a bit to make it lighter and also fit the flavours and ingredients I had. I added some chopped avocado on top for an extra 3 smartpoints because I love avocado and I think it really lends itself to the flavours in this! 

Serves: 2
Smartpoints Per Serving: 8 sp
Smartpoints on No Count: 1sp
Ingredients:
200g Turkey Mince
1 Red Onion
1 Red or Yellow Pepper
75g corn
45g Quinoa
1/2 tsp cumin
1/2 tsp coriander
1 tsp hot paprika
1 tsp smoked paprika
1 tsp garlic powder
1 head Romaine/Cos lettuce
1 grated carrot
1 tbsp olive oil
1 tbsp lime juice
1 tsp brown sugar
1/2 tsp chilli powder
20g low fat cheddar grated
salt & black pepper

Cook the quinoa according to pack instructions, drain and set to one side. Chop the red onion and pepper and fry with the turkey mince in a non stick frying pan over a medium heat. Add the cumin, coriander, praprika and garlic powder and season well. Mix through a couple of tablespoons of water and cook for 4-5 minutes. Add in the corn and the quinoa and cook for 2-3 more minutes until evertyhing is cooked and heated through. 

While this is cooking, shred the lettuce and mix with the grated carrot. Mix together the oil, lime juice, sugar and chilli powder and season to taste. Add a little water if necessary. Toss the lettuce and carrots in the dressing and divide between 2 plates. Sprinkle the grated cheddar on top.

Top each with half the turkey mix and serve immediately. You can add some chopped avocado or guacaomole and sour cream or even a few tortilla crisps for cruch, just remember to add the smartpoints for whatever you use!
