Parmesan & Basil Turkey Burgers!


I am really loving turkey mince at the moment. It is so low in smartpoints and packed full of protein its the ideal ingredient for an easy, low smartpoint and tasty dinner! Because the flavour of the turkey itself is quite subtle, its a great carrier for all sorts of different flavours and great to experiment with. 


As we are coming into summer and BBQ season, I'm always thinking of idea's for different BBQ friendly recipes that can leave a few exrtra smartpoints for a nice cold beer or glass of wine in the sun. These are absolutely perfect at only 2 smartpoints per burger. They are a great summery flavour that go perfect with a nice mixed salad and tahini dressing (recipe for the dressing below). If its not BBQ weather, these can easily be grilled indoors too and will taste just as good! 

BURGERS!
Serves: 4
Smartpoints per serving: 2 sp
Smartpoints on No Count: 1sp
Ingredients
400g turkey mince
20g panko breadcrumbs
25g parmesan cheese grated
small bunch basil chopped
2 garlic cloves crushed
zest of half a lemon
salt & pepper

Put all the ingredients into a bowl and mix until well combined. I find using your hands and mixing together for a good amount of time helps the flavours to come out of the basil and lemon. 

Divide and shape into 4 patties. Spray with oil and place under a hot grill for 12-15 minutes, turning once halfway through. 

Serve on a bed of salad with lemon tahini dressing! 

LEMON TAHINI DRESSING
Serves: 4
Smartpoints per serving: 1sp
Smartpoints on no count: 1sp
Ingredients:
1 tbsp light tahini
1-2 tbsp water
1 clove garlic crushed
1 tsp honey
1 tbsp lemon juice
1/4 tsp cayenne pepper
salt & pepper

Place all the ingredients in a jar with a lid reserving 1 tbsp water. Close the lid and shake really well until combined. Slowly add more water until you have the desired consistency. You want it thin enough to pour, but thick enough to coat the salad. Season to taste.
