Chicken & Bacon Pasta


It's dishes like these that make me really love filling and healthy! No weighing or calculating and a really delicious, comfort food dish that will most definitely keep you going. Despite the fact that pasta is free on F&H and SS, I like to try and keep an eye on the breakdown of my meals to ensure I am not overloading on carbs and am getting enough protein and some healthy fats and I have added weights to the recipe mostly for the purposes of propointing the recipe for anyone counting. Everything can be adjusted to suit taste/appetite.

Ingredients: 
120g wholewheat pasta 
250g chicken breast 
4 bacon medallions 
1 pack Baby asparagus
150g Fine Green Beans
6 Button Mushrooms
4 cloves garlic
1 tub quark 
2 tsp olive oil
3 tbsp fresh basil torn

Cook the pasta according to the pack instructions. Halve the green beans and baby asparagus and add to the pasta for the last 4 minutes of cooking time. 

Meanwhile cut your chicken and bacon medallions into bite sized pieces, slice the mushrooms and peel and crush the garlic. Heat the oil over a medium heat and fry the chicken until browned on all sides and then add the bacon. Continue cooking until the bacon is browned and add the mushrooms and the garlic. Fry gently for 2-3 minutes or until the chicken is cooked through. 

When the pasta and green veg are cooked, drain and reserve some of the cooking water. Add the drained pasta and veg to the chicken & bacon and mix through. Take off the heat and stir through the quark and season well. At this point you may need to add a little of the cooking water from the pasta to help loosen the sauce. Place the pan back on a low heat, mix through the basil and season to taste. Heat gently through, being careful not to let the quark split and serve immediately.
