Quick Dinners

So continuing on my catch up posting - here are 2 quick and easy dinners that I made recently. Both super tasty!

Pan-fried Tuna w/ Warm Tomato & Caper Dressing

Serves 1 - 6pp

1tbsp capers in brine
15g olives in brine, chopped roughly (optional for Filling & Healthy/Simple Start)
Cooking spray
125g fresh tuna steak
2 tomatoes roughly chopped
1 heaped tbsp basil chopped

1tsp extra virgin olive oil
0.5 tsp grated lemon zest
1tsp lemon juice
25g rocket

Put the capers and olives in a bowl and cover with water. Leave to soak to draw out some of the saltiness.
Mix the tomatoes, basil, olive oil, lemon zest and juice in a bowl. Drain the capers and olives, stir into the mix and add 1tbsp of water.
Season the tuna with black pepper and place in a hot pan for 2-3 mins on each side (i used a griddle pan, either frying or griddle works well)
Tip the dressing into the pan and cook for about 30 seconds to just warm through.
Serve the tuna on top of the rocket and topped with the dressing.

I served this with some green beans and baby potatoes. The recipe is for one, but I just multiplied the recipe by 5 and cooked it for my family. It is a really easy one to cook for a few people cos you can just make up the dressing in advance and just fry off the tuna when you are ready to serve.

Spiced Sirloin Steak

Serves 2 - pp depends on size of steak. Marinade is 2pp per person.

2 Sirloin steaks
1tsp cumin
1tsp ground ginger
1tsp ground coriander
2tsp olive oil
2 small cloves of garlic crushed or grated
juice of half a lemon
Salt and pepper

Mix all the ingredients for the marinade except the fresh coriander to form a smooth paste then season well. Spread this over both steaks and leave to marinade for anywhere between 10 mins (while you prepare the accompaniment) or overnight.
Make sure the steaks are at room temperature and then fry in a very hot pan sprayed with cooking spray. Cook steak to your liking and serve.

Managed to get a picture of this while the steaks were marinading. I had mixed fresh coriander in my marinade but it just burned off and didn't add anything, so I left it out the next time and it was much nicer.
